On the menu: Valentine’s Day 2014 (Part 3)

Happy Valentine’s Day! This recipe is one of my all-time favorites. Not just for large group or potluck settings, but individual indulgences as well ;) Just downsize the quantities by however much you see fit.dates, valentine, stuffed, olives, peppersThese dates can be served alone, or with other antipasti items – e.g. marinated olives, roasted peppers, artichoke hearts, cheese wedges (fruit in a bowl with ice cubes was not mine lol but an interesting offering).

Proscuitto-wrapped dates

Prep Time: 20 minutes

Cook Time: 20 minutes

These are my new go-to potluck item for any and every social gathering. Easy, simple, and a definite crowd-pleaser each time. You can also lighten them up by using Laughing Cow cheese wedges instead of brie, and thinly sliced honey ham instead of proscuitto. (Psst..I also eat a deconstructed version for a late night snack sometimes…just because it’s delicious!)


  • 5-6 oz. good-quality proscuitto
  • 16 medjool dates, pitted
  • 3-4 oz. goat cheese brie
  • optional: honey drizzle, sprinkle of sea salt and freshly cracked black pepper


  1. Preheat the oven to 375 degrees.
  2. Line a large baking sheet with aluminum foil and spray lightly with cooking spray.
  3. Using a small spoon (or teaspoon), stuff the dates one by one with a small amount of goat cheese brie. (Don’t overstuff or else the cheese will explode in the oven)
  4. Wrap the brie-stuffed dates with thin slices of proscuitto, ensuring all areas are covered.
  5. Bake until golden brown, about 15-20 minutes.
  6. Top with optional ingredients, if desired.
  7. Serve alongside other antipasti items, or enjoy alone!

Word to the wise: You may want to snatch a few before placing these on the table to serve. Trust me, these go FAST!
